My Plate: Basil Pesto Chicken Caesar Salad
You know the drill, I take a random picture of one of my plates and break down the details for you here.
Never complicated, always simple, healthy and delicious! This is my current obsession, I’ve had it SO much already. Tonight I’m trying it out with salmon! Yum!

Basil Pesto Chicken Caesar Salad
Chicken: I used chicken thighs, spray a glass pan with avocado oil, lay your chicken in the pan, add garlic powder, garlic salt and pepper, I added ghee and a basil pesto (Trader Joe’s and Gotham Greens are great!). Bake at 400 for 30-45 mins.
Build your bowl: greens, chopped raw veggies: carrot, tomato, pickle, red onion, shredded goat cheese, avocado, marinated artichokes, walnuts and a Caesar salad dressing you love (I love Simple Dish!).
One meal, two ways: I made a simple side salad, raw veggies paired with chicken and added a fiber filled carb for the family: jasmine rice, potatoes, pasta or bread.
