My Plate: Mix and Match Meals
I don’t know about you, but I’m the girl who can eat the same meals on repeat over and over again. Once I find meals my family loves, I stick to it!
My family loves a protein, a veggie and a fiber filled carb. I love a protein, a yummy salad and a roasted veggie. It’s simple, it’s healthy, and it works great for us! 🥳🙌🏻
It makes meal planning and prepping effortless because I just shop by foods and build our meals.
Grilled shrimp, asparagus and carrot fries roasted in the oven, and a greek inspired side salad.
Sheet tray supper: all in the oven, salmon, green beans and mushrooms with another side salad.
On this night I used the leftover grilled chicken and tossed with a caesar salad dressing and reheated in the air-fryer, topped with chopped red onion, avocado and roasted asparagus.
Lately I’ve been loving a simple side salad 🥗:
•Chopped romaine, mixed greens
•Chopped raw veggies: red onion, carrots, celery, cucumber, bell peppers, cucumber, tomato, slaw mix (use what you love 😇)
•I love to add a pop of flavor: Greek olives, marinated artichokes, pepperoncini, pickled red onion, banana peppers
•Feta, goat cheese, avocado are great healthy fats to add for flavor and satiation 😍
•Dressing: I love a simple olive oil and vinegar right now with garlic salt, honey mixed with Dijon mustard is great as well!
We love to roast green beans, asparagus, carrot fries, cauliflower, broccoli, mushrooms - just spray with avocado oil, season with garlic powder, salt and pepper. I always put the oven at 400 and keep an eye on the veggies - usually around 20-35 minutes.
We almost always marinate our protein in lemon juice, coconut aminos and garlic powder. It’s so delicious! And simple! We love wild-caught salmon, chicken, and shrimp for this.
I love to prioritize protein and all the veggies for my dinner plate, and often add frozen jasmine rice from Trader Joe’s, buttered pasta, fresh bread, potatoes, or fruit for my family as a side.
I love eating foods that love me back! Keeping it simple, sustainable - never lacking flavor, nutrients, or variety. 🎉

One of the biggest questions I’ve had over the years has been about healthy meals, what are my go to meals, how do I make my salads, can I start a deliver service 🤣, and this is one of the very reasons I started sharing more. I share in hopes that you can recreate your own healthy meals for your family, that you can see veggies actually can taste delicious! Healthy doesn’t have to be boring.
