My Plate: Coleslaw Bowl with Cod and Roasted Asparagus

You know how it goes, I snap a picture of one of my plates and break down the details for you here.
I already shared my BBQ Chicken and Coleslaw Bowls, but this time I mix and matched it another way.
I’m officially obsessed with the coleslaw and make it daily now! It’s so filling, yet so low in calories, full of fiber and so much flavor!
Let’s build your bowl:
Start with your slaw, I like to prep mine ahead of time and store in the fridge. I use a whole bag of coleslaw, add in 2-3 Tablespoons of Chosen Foods avocado oil mayo, a splash of apple cider vinegar, a few drizzles of pure maple syrup, salt and pepper. Simple!
To bake the fish, we just marinated with lemon juice, garlic powder, garlic salt. We roasted the asparagus and tomatoes with avocado oil, garlic salt and powder. Both took about 20 mins at 400.
Toppings: Obsession with pickled red onion still going strong, they just add so much flavor! Sprouted pumpkin seeds. Both ordered from Thrive. Always avocado!
I believe on this night I just added brown rice pasta for my family as a side and watermelon. Super simple, delicious and healthy!
