My Plate Lately
Here’s the deal, I snap pictures of my random meals in hopes that in sharing them, you’ll get some inspiration to recreate your own healthy, simple meals too! Nothing I make is crazy complicated, it’s all so easy, but I believe - super delish, and as always, healthy!
Here’s a look at what I've been eating lately.
Chicken salad on this day, I just used a rotisserie chicken with Chosen Foods avocado oil mayo (from Costco) with chopped pickles (I love the pickle salsa from Whole Foods), with dijon mustard, red onion, celery, garlic powder, salt and pepper. Extra bell peppers on the side, and an apple for my fiber filled carb. Simple, and delish!
Lunch is always simple, surprise! I love having hard boiled eggs or turkey wraps (with mustard, avocado, greens), veggies, hummus or avocado mash, and fruit. I love to add an IQ Bar as a snack, or fruit with coconut yogurt as a post lunch treat (covering my fiber filled carb). It packs easily, fills me up, and I truly love it! My nutrition plan calls for 25% protein, 25% fiber filled carb, and 75% veggies, so it’s super simple to build my plate, staying on plan, working towards my goals, but never counting macros, calories, or points. Nutrition shouldn’t feel like a full time job! I need a plan, but a plan that feels easy, and effortless.
Whether I’m eating out at a restaurant, or eating at home, dinner is always some sort of protein (usually grilled), some sort of salad with a simple dressing (store bought is great, I try to avoid inflammatory oils when I can, or dilute heavier/thicker dressings with lemon or lime juice), some meals it’s just lemon juice, balsamic vinegar. I usually add volume with roasted veggies, avocado, or kraut (for a healthy gut). Dinner is 25% protein, 75% veggies, and I always look forward to a super filling, delish salad! It makes it so simple to eat out, make dinner at home - like I said, I want my nutrition to feel easy, effortless and I need it to work FOR me. I’m a firm believer that we should enjoy life, that your plan should help you do that, not stress you out! My goal is always a balanced, sensible approach.
