My Plate: Super Simple Balsamic Salad

Every Wednesday I’ll be double posting, one of them being a little series called “MY PLATE” where I’ll be snapping a quick picture of my plate and breaking down the details for you. I love to keep things super simple, always delicious, and healthy. My plate is never complicated, but I promise it will leave you feeling light, satiated, and full of energy. I prioritize whole, clean foods, lean proteins, all the veggies, healthy fats, and always room for balance, moderation. I love flavor, and I’ve been told a time or two that prepping salads is my speciality. I’m going to share with you all my secrets, and how to recreate my plate here!
As a busy mom of 3, our family is grounded by our time shared around the table (outside if we’re lucky!), no matter the season, no matter how busy, we truly try to prioritize that time together. My goal is to share simple healthy meal ideas for you, and your family.
Now, let’s break down what’s on my plate!
Super Simple Balsamic Salad Recipe: this one is perfect when you don’t have time to prep and prepare protein, I used hard boiled eggs and deli turkey. Simple!
Base: start with mixed greens, butter lettuce. I add any raw veggies we have on hand, on this night it was chopped bell pepper, celery, cucumber, tomatoes, and radishes.
Healthy fat: I love to add nuts or seeds, tonight I added sprouted pumpkin seeds and always love avocado on my salad. Delish! Another option would be feta, goat cheese, or whatever cheese you love!
Accessories: I usually add some sort of flavor burst, I used pickled red onion and it really takes the salad to the next level! No boring salads here. Another option would be banana peppers, pepperoncini, olives, or artichokes.
Protein: On this night it was super quick, I used hard boiled eggs and deli turkey. Pro-tip: I really try to only use turkey that’s not full of preservatives, turkey and salt are the only ingredients. Perfect when you’re in a pinch!
Dressing: In my opinion, this dressing absolutely makes the salad! I’m having a little moment with this homemade dressing and you’re going to love it!
Balsamic Vinaigrette:
1/4 cup of Balsamic vinegar
1/4 cup of fresh lemon juice
2 teaspoons of dijon mustard
1 teaspoon of honey (or pure maple syrup)
1/4 cup of EVOO
For a little extra credit, you can always add a side of roasted veggies too! I love adding more volume. It helps me stay full and satisfied after dinner, and it just tastes so dang delicious too! On this night we made carrot fries and asparagus. I almost always use avocado oil spray, garlic salt and garlic powder. Easy!
