My Plate: Chicken Bowl with Lemony Yogurt Sauce

It’s been awhile! Hi, friends! I’m back with another super easy meal idea for you, just a quick snapshot of one of my plates and I break down the details for you. This one was so good I literally had it on repeat, and I actually want it for dinner tonight now too! Ha! It’s that good!

I won’t lie, the lemony yogurt sauce is what makes this meal so delicious. The mustard maple Brussels were also amazing! Make both! Maple, mustard, lemon, garlic…I mean, how can you go wrong?

As always, healthy, never lacking in flavor, and super simple.

Let’s break down all the details for you! 

My nutrition program calls for our dinner plates to be 25% protein and 75% veggies. I simply add a fiber filled carb for my family, but on this night - my body was needing a little extra fuel, so I added a few of the sweet potatoes as well. That’s what I love about my program, there’s flexibility within a plan. You make it work FOR you. 

Chicken Bowl with Lemony Yogurt Sauce

Chicken: marinate your chicken in coconut aminos, garlic powder and lemon juice. That’s it! It’s our go to, everyday marinate and it’s so delicious. We grilled our chicken, but feel free to cook whatever way you love.

Sweet and regular potatoes: chop all your potatoes up, toss with avocado oil, garlic powder, salt and pepper. Cover your sheet pan with parchment paper, and roast for about 30ish minutes at 400. Toss about half way through and keep an eye for desired crispiness.

Maple mustard brussels: I love to cut my brussels thin, so in thirds or even use shaved. Create your mixture of half dijon mustard, half pure maple syrup and toss. Lay over parchment paper, add garlic powder, salt and pepper. Roast for about half the time as the potatoes.

Lemony Yogurt Sauce: I used about a cup of coconut yogurt and another time I used plain greek yogurt, juice from 2 lemons (or about 1/4 cup), 2 TBSP of olive oil, 2 TBSP of maple syrup, 1/2 tsp of garlic powder, about 1 tsp of salt, and 1/2 tsp of pepper.

Build your bowl: arugula (it’s the perfect match for all the yummy flavors) but feel free to sub with your favorite green, add your maple mustard brussels, sweet potatoes, chicken and drizzle with your lemony yogurt sauce.
