My Plate: Hot Honey Chicken Bowl with Pickle Slaw

Happy Wednesday, friends!

You know the drill, I take a picture of one of my plates and break down the details for you here. This one is SO delicious, effortless and you know it, healthy. I love a good slow cooker meal that I can prep at the start of my day, especially for those busy after school evenings. You’re going to want to make this one on repeat!

Let’s break it down!

HOT HONEY CHICKEN BOWL WITH PICKLE SLAW:

Chicken: Place chicken, sprinkle with smoked paprika, garlic powder, crushed red pepper flakes (for some heat), pour honey over the chicken, coconut sugar, I also have used chicken bone broth too, splash of apple cider vinegar. Shred the chicken before you’re ready to serve, I love to add a little hot honey once all shredded and ready.

I love using a slow cooker liner for easier clean up, otherwise you can spray with avocado oil.

Scott has this obsession with hot honey, and I have found it at Trader Joe’s and Whole Foods. Just a fun, tasty twist!

Coleslaw: I used one bag of coleslaw and about half the bag of the red cabbage for extra crunch and more veggies! I do a big spoonful of avocado oil mayo, about 2-3 big spoonfuls of pickle salsa and mix. I find the pickle salsa at Harvest Health or Whole Foods, otherwise - just use chopped pickles, and some of the pickle juice. Salt and pepper. I also think bread and butter pickles would be delicious too! Combine to your liking!

To build your bowl: Spring mix, chicken and slaw. Done!

You could also add pickled red onion, sweet potatoes, avocado. We kept it super simple this night! 

One meal, two ways: the meal plan I follow calls for 25% protein, 75% veggies and I love making meals I can plate differently for my family, without making a whole new meal. Scott ate his as a bowl with jasmine rice (frozen from Trader Joe’s is our favorite). The kids had theirs wrapped in a Siete tortilla and added cheese, ranch.

The kids and I went to Public after Pumpkin Fest last weekend, and Beckham couldn’t stop talking about the pretzel bun chicken sandwich he had. I thought on this night it’d be fun to swap out the Siete tortilla for a pretzel bun, I also quickly mixed honey and dijon mustard to pair with the chicken and slaw. Everyone loved it! See how simple it is to just plate your meals differently, but still follow a plan that works for you? That’s why I love the nutrition program I follow! Sustainable, sensible and simple. 

After soccer, and dinner was on our plates within a few minutes thanks to the slow cooker! We added raw veggies, ranch and melon on the side for the kids.
