My Plate: Chicken Caesar Salad Boats with Basil Pesto

Anyone else love a good Trader Joe’s haul? It’s my happy place and after being inspired from one of the girls in my Healthy Holidays Challenge Group, I grabbed all the ingredients to create my own chicken caesar salad boat with basil pesto. You guys, this just might be my most favorite dinner ever. It was SO good. So simple, and healthy.

Don’t sleep on the lemon parmesan asparagus! Making this on repeat.

Shopping list:

Romaine 

Chicken thighs

Basil pesto

Grated parm

Asparagus 

Caesar dressing

Let’s break it down!

Chicken Caesar Salad Boats with Basil Pesto: 

1. Marinate your chicken in my go to, all time favorite: coconut aminos, lemon juice and garlic powder. We grilled our chicken on this night. 

2. Build your boats: basil pesto, chicken, I added chopped red onion and tomatoes, a drizzle of caesar dressing, sprinkle of palm, and a squeeze of fresh lemon juice. Omg, it’s so good! 

That’s it! So effortless, yet so delicious and healthy!

I told you I was obsessed, I recreated it the very next evening for dinner. Let’s break down the lemon parmesan asparagus!

Lemon Parm Asparagus: place in air-fryer, spray with avocado oil spray, season with lemon pepper, garlic powder, garlic salt and pepper, roast for about 18 mins at 400, sprinkle parm on for the last 2 mins, squeeze with fresh lemon.
